These Chocolate Bundt Cake is not only keto, low-carb, gluten-free and sugar-free, it’s also extra rich, super moist, and very decadent. It’s the perfect dessert for your holiday table. Chocolate Bundt Cake.

Cook Time 1 hour
Additional Time 20 minutes
Total Time 1 hour 30 minutes

Ingredients

Cake

  • 2 ¾ cup almond flour
  • 1 ⅓ cup Swerve sweetener
  • 2 tsp gluten-free baking powder
  • ½ cup cacao powder
  • 6 large eggs
  • ½ cup melted butter or ghee
  • ½ tsp sea salt
  • 2 medium zucchini (pureed)
  • 2 tsp sugar-free vanilla extract

Frosting

  • ¼ cup virgin coconut oil
  • ½ cup cacao powder
  • Stevia sweetener
  • ½ tsp sugar-free vanilla extract

Instructions

    1. Preheat the oven to 325 F and grease a bundt pan. In two separate bowls mix together the wet and dry ingredients respectively.
    2. Pour the wet mixture into the dry and mix together well. Pour the batter into the prepared pan. Smooth out the top, transfer to the oven and bake for 60 minutes or until a toothpick inserted into the middle comes out clean. 
    3. Let cool in pan 20 minutes, and then flip out onto a wire rack to cool completely before inverting onto a cake stand.
    4. To make the frosting, melt together the coconut oil and cacao powder, add stevia to taste 2-3 drops at a time and vanilla extract.
    5. Pour the frosting over the cake and serve. Garnish with some fresh raspberries or hazelnuts. Store covered at room temperature for up to 4 days.

Notes

This is one of those desserts that makes everyone feel included and loved. Just make sure to set aside an extra slice for yourself to enjoy after all the guests have left and the kiddos are in bed, you’ll deserve it after all the holiday hustle and bustle.
