Ingredients
- 1 1/2 cups blanched almond flour
- 1/2 cup confectioners erythritol
- 1/2 tbsp baking powder
- 6 tbsp melted butter
- 1 tsp ground cinnamon
- 1/3 cup unsweetened almond milk
- 1/4 cup full fat sour cream
- 1 tsp vanilla extract
- 1/2 tbsp banana extract or 1 very ripe banana (mashed)
- 3 Eggs
- 1 tbsp calorie free maple syrup
Instructions
- Preheat your oven to 350 F. Add almond flour, erythritol, baking powder, and ground cinnamon into a large bowl, whisk and set aside. In an even larger bowl add rest of the wet ingredient and combine them.
- Now add the dry ingredients into the wet ingredients and fold them together with a spatula. Once they’re well incorporated with one another, line a 8.5″ x 4.5″ bread pan with parchment paper, coat the parchment paper with baking spray, and add the batter.
- Once the batter is fully poured in, add the toppings of your choice and bake for around 45-50 min or until the loaf is evenly browned and an inserted toothpick comes out clean.
- Allow the bread to fully cool before slicing. Store in refrigerator for up to 5 days or freeze for up to 3 weeks.
Notes
Nothing makes a better banana bread then very ripe bananas, in fact, the more disgusting those bananas look rotting on your counter, the better the banana bread is going to taste.
