Ingredients
Chicken:
- 6 oz. chicken breast
- 2 tbsp avocado oil
- 1 tbsp balsamic vinegar
- 1 tbsp Italian seasoning
- pinch of sea salt
- 1/2 tsp pepper
- 4 cloves garlic (minced)
Salad:
- 5 cups romaine lettuce leaves (or cos lettuce), washed and shredded
- 1/2 red onion (sliced)
- 1 scallion (green onion)
- 1 avocado (sliced)
- 8 plum cherry tomatoes cut in quarters
Dressing:
- 3 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- 1 tsp Italian seasoning
- 1/2 tsp sea salt
- pinch of pepper
Instructions
- Combine together all the chicken ingredients and allow to marinade for at least 30 minutes.
- Once the chicken has marinated heat your cast iron grill pan over high heat, grill chicken 4-5 minutes per side until grill lines develop.
- Let the chicken rest while you prepare the dressing and salads.
- For the dressing simply place all the ingredients into a small jar and shake to combine.
- Build salad and start with the lettuce and put it in a big bowl. Drizzle half of the dressing on the lettuce. Add the plum cherry tomatoes, red onion, green onion and sliced avocado on top of the lettuce.
- Finally slice the chicken and place it on top of the salads. Drizzle with the remaining dressing and serve.
